Baked Shrimp Egg Rolls Recipe

- FOR EGG ROLLS-
- 1½ Cups SeaPak Popcorn Shrimp
- 2 Cups Packaged Slaw Mix
- Handful of Fresh, Chopped Parsley
- 2 TBS Butter
- 1½ TBS Garlic (minced)
- ½ TSP Ginger (ground)
- ½ TSP Sesame Oil
- ½ TBS Honey
- 8 Large Egg Roll Wrappers
- FOR DIPPING SAUCE-
- Dipping Sauce
- 1½ TBS Honey
- 2 TBS Soy Sauce
- ½ TBS Sesame Oil
- 1 TSP Ground Ginger
- ½ TSP Sesame Seeds (optional)
- FOR EGG ROLLS-
- Preheat oven to 400*
- In a large skillet saute slaw mix, parsley, and minced garlic for 2 minutes in butter.
- Add in ginger, sesame oil and honey. Saute for another 2 minutes.
- Add in shrimp, cooked according to package instructions, and mix until well combined. Remove from heat.
- Lay egg roll wrappers flat and separated on work space.
- Spoon 2 TBS of shrimp and veggie mix in center of each egg roll wrapper.
- Roll up egg rolls using a dab of water to seal edges.
- Brush with butter and place on baking tray.
- Bake 10-12 minutes, until egg rolls are a nice golden brown.
- Mix dipping sauce ingredients together.
- Serve baked shrimp egg rolls hot with dipping sauce and
