Guess what? We’re up to week 7 of The Cupcake Project! Crazy, right? I know you’ve been following me this past month and kept up while I bake my way through the amazeballs cookbook,  Your Cup of Cake. 1 new homemade cupcake recipe a week. You have right? I bought this gorgeous book written by Lizzy Early at Sam’s Club and made a sort of baking challenge for myself. It’s a tough job, but someone’s got to do it. Your welcome. I let Ethan go through the book and pick out which homemade cupcake recipe he wanted me to make for this week. Kinda impressed he picked these Lemon Lime Cupcakes! They are moist, perfectly sweet and tart. Everything that screams fresh and clean, full of citrus flavors perfect for the season!  I hate that fake ‘lemon lime’ sickly sweet flavor you get with candies and cakes and stuff, ya know? These homemade cupcakes use real lemon lime flavors from fresh fruit, their juice and the zest as well. They were way too easy to keep popping in my mouth.  WAY… Next time, I may switch it up, I found a recipe from The Tartlette and she uses meringue on top rather than Lemon Buttercream or Cream Cheese Frosting… Kind of made my mouth water. Ok, let’s do this! Ready to get your bake on with me?

The Cupcake Project: Lemon Lime Cupcakes Homemade Cupcake Recipe

Ingredients

  • For Lemon Lime Cupcakes:
  • 1 Box White Cake Mix (I used Pillsbury)
  • 4 Egg Whites
  • 1/3 Cup Oil
  • 1/2 Cup Buttermilk
  • 1/4 Cup Lemon Lime Pop (or soda, however you say it)
  • 1/2 Cup Sour Cream
  • 2 TBSP Lime Juice
  • 1 1/2 TBSP Lime Zest
  • For Lemon Cream Cheese Frosting:
  • 1/2 Cup Butter (softened)
  • 8oz Cream Cheese (softened)
  • 2 TBSP Lemon Zest
  • 2 TBSP Lime Zest
  • 1 TBSP Lemon Juice
  • 4-5 Cups Powdered Sugar
  • Lemon & Lime Zest for garnish

Instructions

To get these Lemon Lime Cupcakes going, let's preheat your oven to 350*. Pull out those cute liners and fill your tins up. (I use Wilton Color Cups as they hold their color and never turn brown) This will make 24 homemade cupcakes.

In small bowl, sift cake mix and set aside.

In large mixing bowl, use a whisk to combine egg whites, oil, buttermilk, Lemon Lime Pop, sour cream, lime juice, and lime zest until smooth. Add sifted cake mix and mix until super smooth and no lumps! Remember, I always tell you, lumps are yucky!

I say this every time we make homemade cupcakes, and I'm going to say it again. Use a food scoop to pour batter into cupcake liners. It makes it way less messy. And, it takes all the guess work out of getting them filled to the right amount. I'm all about less mess and easy! Fill your liners 3/4 full. Depending on your oven, bake for 17-22 minutes. We were right about to the 20 minute mark with these. Use the old 'toothpick comes out clean' trick to test yours. When they are baked, pull them out of the oven, set aside on cooling rack. Now, while they are cooling off, we're going to make some frosting! (yum!)

For Lemon Cream Cheese Frosting:

In large mixing bowl, beat the butter and cream cheese for about 2 minutes. Add Lemon juice, lime zest and lemon zest and continue to beat. Now slowly start to add your powdered sugar and continue to beat until it's at the right consistency you want for decorating. Don't forget to scrape the sides of the bowl!

If your frosting is too thin, add a tad more powdered sugar, a tablespoon or so at a time. If it's too thick, add 1 TBSP milk at a time. Now, go on! When you're happy, give it a little lick. Tastes yummy, right??! If you have the small fry's there, let them lick the beaters. That's one of the best parts of being a kid!

Once your Lemon Lime Cupcakes are cooled completely you're ready to decorate! Grab your piping bag and go to town on those babies! Perfectly easy homemade cupcake recipe!

So, kinda sweet, tart and citrus-y awesome, right? For those of you who may be new to The Cupcake Project, and just stumbled into these Lemon Lime Cupcakes, here’s all 5 weeks up to now:

Week 1, we made these Chocolate Malt Homemade Cupcakes! Just like an old fashioned soda fountain drink. My dad’s favorite!

Week 2, we whipped up some Orange Creamsicle Cupcakes. Remember those creamy bars you got from the Ice Cream man?? THAT!!

For Week 3, we made Ice Cream Cone Cupcakes! All the fun that comes with Summer, but no melty mess! And, they are super cute for Summer BBQ’s and parties. HUGE hit with the kiddies!

Week 4 we made THE prettiest homemade cupcakes ever. Really… Strawberry Pink Lemonade Cupcakes are DA BOMB!

Week 5 fell on the 4th of July, so naturally we threw down some 4th of July Cupcakes.

Week 6 I made these Uh.Maze.Ing White Chocolate and Blackberry Cupcakes. Oh.My.Lanta! Just go check out the photo and tell me you don’t want to make them! Gorgeous!

    I don’t think I’ve ever had a lemon cupcake, but they do sound good. I’m usually a chocolate kinda gal, but most people don’t make them moist enough for me. I’ll have to give these a try!
