Remember when I said the Strawberry Pink Lemonade Cupcakes we made for week 4 of The Cupcake Project were the prettiest homemade cupcakes ever? I think I’ve found a strong competitor! These Blackberry White Chocolate Cupcakes are almost too beautiful to eat! But you totally should! Eat them, I mean. Oh so light and fluffy white chocolate cupcakes and ganache topped with melt in your mouth delicious Blackberry Buttercream frosting. Yes! Tastes as Uh.Maze.Ing as they look too! I think there’s something to be said for adding puree to the frosting. Confession? I ate it right there over the sink with a spoon… twice. After I ate 3 of the white chocolate cupcakes! So wrong… But SO right. This Cupcake Project is going to end with all of you getting amazing homemade cupcakes and awesome recipes, I’ll be stuck with an extra 10 lbs of frosting on my butt. Totally worth it. I’m a martyr like that. Ok, ok, enough about me and my lack of self control. Let’s get to baking! Ready for some Blackberry White Chocolate Cupcakes? Let’s do it! OH! Wait… Fun Fact! In doing The Cupcake Project, I learned the term ‘Cupcake’ came about early in the 19th century. Muffin pans didn’t exist so they made tiny cakes in small pottery cups! Cool, right!

The Cupcake Project: Blackberry White Chocolate Cupcakes

Ingredients

  • For Cupcakes:
  • 1 Box White Cake Mix (I used Betty Crocker)
  • 3 Eggs
  • 1/3 Cup Oil
  • 1 1/4 Cup Milk
  • 2 TSP Vanilla
  • 1 1/2 Cups Fresh Blackberries
  • For Blackberry Buttercream:
  • 1 Cup Butter (softened)
  • 2 TBSP Blackberry Puree (see note)
  • 3-4 Cups Powdered Sugar
  • Fresh Blackberries (for garnish)
  • For White Chocolate Ganache:
  • 1 Cup White Chocolate Chips
  • 3 TBSP Whipping Cream
  • Note:
  • To make blackberry puree, put fresh berries in blender or food processor and blend until liquid. Run through strainer to remove seeds.

Instructions

For The Cupcakes:

Let's start off these gorgeous Blackberry White Chocolate Cupcakes by preheating your oven to 350*. Line pans with cupcake liners. This will make 24 homemade cupcakes. In small bowl, sift cake mix and set aside.

In large mixing bowl, mix eggs, oil, milk, and vanilla on low speed until smooth.

Slowly add your cake mix and blend until it's smooth and lump free. Remember, lumps are yucky! Fold in blackberries.

I know I say this every time we make homemade cupcakes, and I'm totally saying it again. Use a food scoop to pour batter into cupcake liners. Here's why. It makes it way less messy. And, most important for me, it takes all the guess work out of getting them filled to the right amount. Fill your liners 3/4 full. Depending on your oven, bake for 16-20 minutes. We were right about to the 17 minute mark with these. Go on and use the old 'but never fail toothpick comes out clean' trick to test yours. Set those aside on cooling rack. And, while they are cooling off, we're going to start on the frosting. The ganache has to be warm and the cupcakes cooled, so that's last.

For Blackberry Buttercream:

In large mixing bowl, beat butter for a good 2 minutes. Scrape down the sides of the bowl and add blackberry puree. Beat until that's mixed in really good and the color is a nice uniform pink-ish purple. Gradually add in your powdered sugar and continue to beat until it reaches the right consistency for how you plan to frost. Too thick? Add a TBSP of milk.

Have your homemade cupcakes cooled down? Good! Let's get to the delish white chocolate ganache! In medium saucepan, warm whipping cream until small bubbles start to foam around the edges. Careful not to over-heat and get to an actual boil! While that's warming up, place your chips in a microwave safe bowl and melt. You're going to want to stir them every 1/2 minute or so, don't want these clumpy. When chips are melted pour into cream and mix well!

I found the easiest way to top the cupcakes with ganache is with a spoon. Some people dip the tips, but they just look to messy every time I try. And, when you're making these Blackberry White Chocolate Cupcakes, we are aiming for Puuuurty! When your ganache has cooled and set (give it a good 5 minutes or so) you can work some magic piping skills and top with fresh blackberries!

And we're done!! Gorgeous, right?

I’ve made 1 new homemade cupcake recipe a week. This week’s Blackberry White Chocolate Cupcakes are right there on page 102! It’s written by Lizzy Early. I’ve gotten so many emails from you all asking what I use to decorate all the cupcakes we’ve made for The Cupcake Project. So, let me answer everyone at once. Being no pro in the decorating department, I started out with Cupcake Decorating Lab: 52 Techniques, Recipes, and Inspiring Designs! book. Super, super easy to follow and also comes for your Kindle, which was nice! I read that over and over a dozen times at least to get the basics down. And, I started out with this small Wilton 12-Piece Cupcake Decorating Set. It includes all the popular tips, some disposable bags and instructions to get you started there as well. I’ve since added about a dozen more tips and should probably just start buying stock in Wilton. But, those 2 things will be perfect to set you on your way if you’re a beginning cupcake decorator like me.

Here’s a recap of all the amazing homemade cupcake recipes we’ve done so far for The Cupcake Project….

Week 1, Our Chocolate Malt Homemade Cupcakes! Just like an old fashioned soda fountain drink. Which happens to be my dad’s favorite!

Week 2, we made Orange Creamsicle Cupcakes. Oh Mylanta! … Remember those Ice Cream bars?? THAT!!

For Week 3, we made Ice Cream Cone Cupcakes! All the Summer fun, no melty mess! And super cute for Summer BBQ’s and kids parties. HUGE hit with the kiddies!

Week 4 we made the 1st batch of the prettiest homemade cupcakes ever.… Strawberry Pink Lemonade Cupcakes and they are DA BOMB! And now, I’m not sure which are prettier!! These Blackberry White Chocolate Cupcakes or those!

    This is the one…I’ve followed all the weeks,and this is it. The one I will definitely try to make. I have to make a couple of adjustments because my son needs gluten free, but I am SO going to make these. I needed something that used a white chocolate (caffeine free sad face over here) and that was yummy, plus I could easily adjust for the gluten issue. The raspberry on top DID IT. I wish I had time to get all of the ingredients before my family cookout tomorrow. I love wowing them with my new baking prowess every year!
