Toasted and Creamy Coconut Cupcakes – The Cupcake Project

Ethan and I were watching Survivor last week. And, as usual, the conversation always turns to climbing trees, grabbing coconuts and cracking them open. We actually bought him a couple at the store once just so he could drink the water. Trust me, the idea is way cooler than trying to really crack them open at home. While I’m not really a fan of climbing trees to grab them, I am a huge fan of anything coconut. I was really happy to see Creamy Coconut Cupcakes was next up on our Cupcake Project list! You have been following along, right? This one is super pretty and perfect for Mother’s Day coming up! Bake some coconut cupcakes and have the kiddos make mom a handmade card. BAM! Great gift! Let’s get to baking!

Coconut Cupcakes Ingredients

Creamy Coconut Cupcakes

Ingredients:

For Coconut Cupcakes

  • 1 Box White Cake Mix
  • 4 Egg Whites
  • 1/3 Cup Oil
  • 1 TSP Coconut Extract
  • 1 TSP Vanilla Extract
  • 1 Cup Coconut Milk (canned, any brand)
  • 1/2 Cup Sour Cream

For Coconut Cream Frosting

  • 1/2 cup butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 teaspoon coconut extract
  • 4-5 cups powdered sugar

Shredded Coconut for decoration (I bought this kind and toasted it – 5 minutes on *325)

Directions:

Let’s get started with our Coconut Cupcakes by preheating the oven to 350*. Line pans with some really cute cupcake liners. 1 of my favorites are these. They have colors for every season and flavor!!
(This recipe will make 24 homemade cupcakes)

I just bought this pretty pink KitchenAid mixer because my old one finally gave out. Can I just say how much I love, luv, lurve it?? And, since it’s on sale, I bet mom would love it too, just sayin’…. Anyways, in a mixer combine eggs, oil, coconut milk, sour cream and extracts. Slowly add cake mix and blend until super smooth. Because? Right! Lumps are yucky!

And, as I always say,  use a use a measuring scoop to pour batter into cupcake liners. Less mess, no guess! (here’s the ones I use. 4 sizes and SUPER cheap!)  Fill your liners 3/4 full. Depending on your oven, bake for 18-22 minutes. Use the good, never fail ‘toothpick comes out clean’ trick to test yours. Are they done? Awesome. Set those aside on cooling rack. While they are cooling off, we’re going to start on the Creamy Coconut Frosting. Can’t frost a hot cupcake, right?

In large mixing bowl, beat butter and cream cheese for a good 2 minutes.  Add coconut extract, then powdered sugar (slowly or you’ll have a huge mess) Did you reach the consistency you’re going for? Too thick? Add a TBS of milk. I’ve had people email with questions on how to thicken frosting without adding a sickeningly sweet amount of powdered sugar. My best tip is instant pudding! Grab a small box of whatever flavor you’re aiming for and add a tablespoon or so at a time! BAM! Homemade hack from me to you! You’re welcome!

Now, frost those creamy good coconut cupcakes and garnish with your toasted coconut flakes! We’re done my loves!

For newbies to The Cupcake Project, and just stumbled into these perfect Coconut Cupcakes, here’s all 12 weeks up to now:

Week 1, we made these Chocolate Malt Homemade Cupcakes! Just like an old fashioned soda fountain drink. My dad’s favorite!

Week 2, were those  Orange Creamsicle Cupcakes. Remember those creamy bars you got from the Ice Cream man?? THAT!

For Week 3, we made Ice Cream Cone Cupcakes! OMGleeee…. All the fun but no melty mess! And, they are super cute for kids parties.

Week 4 we made THE prettiest homemade cupcakes ever. Really… Strawberry Pink Lemonade Cupcakes Check them out, they are DA BOMB!

Week 5 fell on the 4th of July, so naturally we threw down some 4th of July Cupcakes. Red, White & Blue happiness!

Week 6 I made these Uh.Maze.Ing White Chocolate and Blackberry Cupcakes. Oh.My.Lanta! Just go check out the photo and tell me you don’t want to make them! Gorgeous!

Week 7 was the sweet and tart Lemon Lime Cupcakes. Did you bake them up?

Week 8 was Orange White Chocolate Cupcakes! Add some black sprinkles and you have another Halloween Dessert idea!

Week 9 was the Uh.Maze.Ing Caramel Apple Cupcakes that have literally taken off on Pinterest!

Week 10 was the Orange Cranberry Cupcakes! Sweet and tart perfection!

Week 11 were the festive and lucky Andes Mint Chocolate cupcakes! Oh yeah! I went there!
