If you haven’t caught on, I have a slight obsession with baking homemade cupcakes. Last week, I told you about my new weekly theme – The Cupcake Project. I kicked it off with Chocolate Malt Homemade Cupcakes. Did you see them? Did you make them? You totally should! Seriously Uhh.Maze.Ing! I got the whole idea when I was food shopping (naturally) and stumbled across the awesomesauce new cookbook written by the super cute Lizzy Early. Aside from having really great hair (really, girl’s rockin’ lovely locks!) she’s a genius! My girl came up with all these unique homemade cupcakes, stuck them in a super easy cookbook with beautiful photos and forced me to buy it. Ok, she didn’t force me, technically, I just have that obsession and I was set-up. So, to make it seem not so crazy, I’m going to bake my way through it 1 cupcake at a time! Sort of like that Julie/Julia movie but homemade cupcakes and not french food!! See, totally not crazy at all! And since the family completely devoured last week’s batch, I’m keeping them happy. Win / Win! Ready to bake week 2 with me?

The Cupcake Project: Orange Creamsicle Homemade Cupcakes Recipe

Ingredients

  • Cake:
  • 1 Box White Cake Mix (I used Pillsbury)
  • 1 Box Cheesecake Flavored Instant Pudding
  • 4 Eggs
  • 2/3 Cup Oil
  • 1/2 Cup Milk
  • 1/4 Cup Orange Juice (I used no pulp)
  • 1/2 Cup Sour Cream
  • 2 TBSP Orange Zest
  • Orange Cream Buttercream:
  • 1/2 Cup Butter (softened)
  • 8 oz Cream Cheese (softened)
  • 2 TSP Orange Flavored Gelatin
  • 2 TSP Orange Zest
  • 1 TSP Vanilla Extract
  • 4-5 Cups Powdered Sugar
  • 1 TBSP Milk

Instructions

For The Cupcakes:

Start by preheating your oven to 350*. Find some cute liners and line your cupcake pans.

In small bowl, sift cake mix and instant pudding mix and set aside.

In large mixing bowl, mix eggs, oil, milk, orange juice, sour cream and orange zest on low speed until completely combined.

Slowly add your dry ingredients to the medium bowl and mix until it's smooth and lump free. Remember, lumps are yucky!

I always use a food scoop to pour batter into cupcake liners and as I've said so many times, it makes it way less messy and no guessing to get them filled the right amount. Fill liners 3/4 full. Depending on your oven you'll bake for 15-20 minutes. We were closer to the 17 mark. Use the old 'toothpick comes out clean' trick to test! Set those aside on cooling rack. While they are cooling off, let's make some frosting...

For Orange Cream Buttercream:

In large mixing bowl, beat the butter and cream cheese until well incorporated. Don't forget to scrape the sides of the bowl! Add gelatin, orange zest and vanilla extract.Continue to beat until smooth. Now slowly start to add your powdered sugar. When you achieve your desired consistency, you're done! You may need all or slightly less depending on how you plan to decorate. If it's a bit too thick, you can add a tablespoon of milk at a time. If it's a bit too thin, add a tad more powdered sugar a little at a time. Give it a little lick. Tastes good, right??!

Once your super yummy Orange Creamsicle Homemade Cupcakes are cooled completely decorate!

So, after finishing week 2 of The Cupcake Project, I’m beginning to think a career as a professional cupcake decorator may be out. At least for now. Oy Vay! How people get their cupcakes looking so darn pretty with just a simple ‘whoosh‘ around and swirl 2 or 3 times is beyond me. I swirl, make a gooey mess, scrape off frosting, repeat process 3 times. Then we have something! Also, to feed my little cupcake baking obsession, I think I’m going to hit up the Wilton aisle at the craft store! Buy new tips for the pipping bag! No, it’s totally not crazy that this makes me super happy!

Week 2 of The Cupcake Project turned out super yummy!  They are really light and fluffy. More than most we’ve made. The frosting has a nice orange flavor but not too sweet at all. Perfect for a summer dessert I think! The book is super easy to follow and I can’t say enough about the amazing photos! I can’t wait to show you next week’s pick! I’ll give you a hint… Think ICE CREAM! I know!! Exciting!

**UPDATE**

Here’s Week 1, Our Chocolate Malt Homemade Cupcakes! Just like an old fashioned soda fountain drink!

For Week 3, we made Ice Cream Cone Cupcakes! All the Summer fun, no melty mess!

Week 4 I have outdone myself! These Strawberry Pink Lemonade Cupcakes are SO pretty. So heavenly… you must try them!

Week 5 came on The 4th of July, so naturally we baked these 4th of July Cupcakes.

Week 6 I made these Uh.Maze.Ing White Chocolate and Blackberry Cupcakes. Oh.My.Lanta! Just go check out the photo and tell me you don’t want to make them! Gorgeous!

Week 7 we whipped up some sweet and tart Lemon Lime Cupcakes. Perfect for Spring and Summer dessert baking!

Week 8 was Orange White Chocolate Cupcakes! Add some black sprinkles and you have another Halloween Dessert idea!

Week 9 was the Uh.Maze.Ing Caramel Apple Cupcakes that have literally taken off on Pinterest!

Week 10 was the Orange Cranberry Cupcakes! Sweet and tart perfection!

Week 11 were the festive and lucky Andes Mint Chocolate cupcakes! Oh yeah! I went there!

And, week 12 were the Toasted Coconut Cupcakes. Super delicious, just sayin’…

Week 13 we went and threw down some Milky Way Caramel and Chocolate Brownie Cupcakes. Yeah, totes did it up good too!

Weel 14 were the unbelievably delish Dr. Pepper and Chocolate Cherry Cupcakes. I found heaven in those babies!

    Just made these for my son’s birthday – they are FABULOUS! I only made a slight change on the cake flavor and the pudding flavor to vanilla. Much better than similar ones I have had from the local bakery. Thanks for posting the recipe and directions.
