The Cupcake Project: Chocolate Malt Homemade Cupcakes Recipe

I’m starting a whole new project ya’ll!! And, most likely gain 20lbs from homemade cupcakes, but it’s totally all good! Remember the other day when I told you about my shopping trip to Sam’s Club? I picked up this awesomesauce new cookbook written by the super cute Lizzy Early. I went in for some Chicken Fries for a new dip recipe and came home with the most beautiful book full of not only all these crazy, good recipes, but these photos!!! Oh.. totally the bomb! Ms. Lizzy has some mad skillz! So, after drooling looking through the book, a light bulb went off. I’m going to bake my way through it 1 homemade cupcake at a time! Sort of like that Julie/Julia movie but cupcakes and not french food!! Yes, yes, yes, I’ll show you my flops if they happen too. I showed you our #Fail of a Mother’s Day Craft, right? I think I’ll do just fine with the actual baking part, it’s the decorating part that will flub it all up, eventually. Most are too pretty to eat! I’m calling it The Cupcake Project. I’m seriously excited about it! And, the fam is totally hyped too. Because, homemade cupcakes!! Ready to see how I did with the 1st one?

The Cupcake Project: Chocolate Malt Homemade Cupcakes Recipe

Ingredients

  • Cake:
  • 1 Box Devil's Food Cake Mix (I used Pillsbury)
  • 3 Eggs
  • 1/2 Cup Oil
  • 3/4 Cup Buttermilk
  • 1 Cup Sour Cream
  • 1 TSP Vanilla Extract
  • 1/2 Cup Malted Milk Powder (found in coffee/tea aisle)
  • Chocolate Malt Buttercream:
  • 1/2 Cup Butter (softened)
  • 8 oz Cream Cheese (softened)
  • 3/4 Cup Cocoa Powder
  • 2-3 Cups Powdered Sugar
  • 1 TSP Vanilla Extract
  • 1/2 Cup Malted Milk Powder

Instructions

For The Cupcakes:

Start by preheating your oven to 350*. Find some cute liners and line your cupcake pans.

In medium bowl, mix eggs, oil, buttermilk, vanilla and sour cream until nice and smooth.

In small bowl combine cake mix and malted milk powder. I used a fork and just made sure both were well combined. Slowly add your dry ingredients to the medium bowl and mix until it's smooth and lump free. Remember, lumps are yucky!

I always use a food scoop to pour batter into cupcake liners and as I've said so many times, it makes it way less messy and no guessing to get them filled the right amount. Fill liners 3/4 full. Depending on your oven you'll bake for 15-20 minutes. We were closer to the 17 mark. Use the old 'toothpick comes out clean' trick to test! Set those aside on cooling rack. While they are cooling off, let's make some frosting...

For The Chocolate Malt Buttercream:

In medium bowl, beat the butter and cream cheese until well incorporated. Don't forget to scrape the sides of the bowl! Add cocoa powder, vanilla extract and malted mix powder. Continue to beat until smooth. Now slowly start to add your powdered sugar. When you achieve your desired consistency, you're done! You may need all or slightly less depending on how you plan to decorate. If it's a bit too thick, you can add a tablespoon of milk at a time. If it's a bit too thin, add a tad more powdered sugar a little at a time.

Once your super awesome Chocolate Malt Homemade Cupcakes are cooled completely decorate! Since I'm baking my way throught the whole book, I tried my best to get them looking as super cute as Ms. Lizzy's, and added chocolate malt balls and those cute, colorful straws like you'd find in an Old Fashioned Chocolate Malt!

Ethan loves to ‘taste test’ as we go along and really, what kid doesn’t? He’s forever licking the beaters when he can pry them out of my hot little hands. What? I like licking the batter too! So, we couldn’t help play a bit of a funny and let him taste the frosting before we added the powdered sugar. Yeah… This happened!

So, what do ya think? My Cupcake Project is off to a pretty awesome start if I do say so myself! The book is super easy to follow, it has the most amazing photos ever and, I’m pretty sure these the best homemade cupcakes I’ve made to date! I can’t wait to dive into our next pick! For Week 3, we made Ice Cream Cone Cupcakes! All the Summer fun, none of the melty mess!

Week 4 I have outdone myself! These Strawberry Pink Lemonade Cupcakes are SO pretty. So heavenly… you must try them!

Week 5 came on The 4th of July, so naturally we baked these 4th of July Cupcakes.

Week 6 I made these Uh.Maze.Ing White Chocolate and Blackberry Cupcakes. Oh.My.Lanta! Just go check out the photo and tell me you don’t want to make them! Gorgeous!

Week 7 we whipped up some sweet and tart Lemon Lime Cupcakes. Perfect for Spring and Summer dessert baking!

Week 8 was Orange White Chocolate Cupcakes! Add some black sprinkles and you have another Halloween Dessert idea!

Week 9 we baked up some Caramel Apple Cupcakes. Can you say FALL FAVORITE??!!

    Those look amazing! I love the wrappers too, very cute. Poor Ethan, I’ve tasted frosting before the sugar was added, and I’ve also insisted on tasting baking chocolate, not a fun experience! LOL!

    Oh my goodness, how amazing do those cupcakes look?! I will have to pass this recipe along to my daughter, because I can’t bake. I am not kidding…I forget sugar, I forget eggs…it is not pretty. I can cook but that is because I can wing it!

    I can’t believe you did that to Ethan! Ha. He did NOT enjoy that trick. Lemme tell you, at any stage of this baking process, I could have stopped and got right into the eating process. This looks super yummy and like it wouldn’t last in my house. And the kids wouldn’t have anything to do with it. Scouts honor.
