Summer Ice Cream Bar Desserts – A Little Rain Didn’t Ruin Our Cookout!

Summer Ice Cream Bar Desserts – A Little Rain Didn’t Ruin Our Cookout!

Making your own Ice Cream Bar is super easy. They are perfect for summer cookouts like we had this weekend! Sort of a pre-Mother’s Day celebration since we won’t all be together next weekend. I had an awesome Beer Can Chicken recipe ready to go on the grill. We set up a beautiful picnic table. Filled it with all the goodies for our ice cream bar. It was going to be amazing… and fun… and outside. Then, it started to rain.

So, we grabbed the picnic table and brought the whole thing right into my family room. Frozen marble slab, chocolate dipping sauce, toppings and all! Now, it wasn’t quite the fail my Mother’s Day Craft was, Because, Ice Cream Bar!! Since Fruti Bars asked me to create a summertime cookout dessert with their Chunks O’ Fruti  Bars, I was going full steam ahead and making our cookout into a cookin! When I hit up Sam’s Club the other day, I grabbed the last 2 boxes they had. Check out my whole shopping trip, it was a seriously interesting adventure, to say the least! Once I checked out the box, I have to say I was totally impressed that Fruti Bars are all natural. No high fructose corn syrup and they are verified by the Non-GMO Project! My mother-in-law is forever teaching us about Non-GMO products, so she was super happy to see I grabbed those.

Fruti doesn’t add any artificial colors or flavors either. These delicious babies are 100% Natural Fruit Bars. Packed full with real premium fruit. They are low in calories and the strawberry bars, they have zero fat! Perfect for my little ice cream bar, right? I grabbed a few bars of each flavor and cut them into little square shapes. Poked them with a toothpick for easy dunking and rolling in our favorite toppings and VOILA! We totally forgot all about that rain going on outside!

Nothing. Ethan’s mouth was stuffed full so all he could manage was a two thumbs-up when I asked what he thought. This was his first bite. By the end, there was literally ooey, gooey, yummy ice cream bar chocolate sauce and toppings covering his whole face and half way up his arms. It was awesome. Since it’s nowhere near as hot as it will be here in Las Vegas yet, I’m positive we’ll be able to have an actual outside cookout and make this tasty dessert again. Outside! And Ethan’s already eaten 3 right off the stick! I’m cool with that. Way better than those frozen icee-pops! Also, I have a homemade ice cream recipe I’ve been dying to try. It doesn’t use that noisy, clunky maker, just real fresh ingredients. I’m going to use a few of the Fruti bars in place of cutting up all that fruit! I’ll be sure to share that recipe!

Mishaps are totally the collection of stories that makes up our crazy life. If I’m being honest, I’m really glad it rained on our outside cookout! We were all together, we had an awesome dinner. Everyone loved the Fruti Ice Cream Bar…. And we laughed. Good Times!

My 3.5 year old is on a camping kick. That’s all she talks about so I think I’m going to take her camping (for one night) before it gets too hot. Who knows? Maybe it will become our summer tradition.

I think making forward memories is what life is all about – making opportunities for memory moments to happen. I plan lots of our travel around memory making moments that we’ll be able to reflect on later!
