Loaded Baked Potato Salad Recipe Made Fresh & Easy

So late Friday afternoon, our AC decided to take a big ole kaput. As in, it totally went out. On a FRIDAY! Right as I was going to throw dinner in the oven. It was *108 here in Las Vegas. I put my own kaput on making dinner in the oven. Big time bummer. Can you turn a loaded baked potato into a cold Loaded Baked Potato Salad? I was about to find out. You guys, within the first 20 minutes, I got sweaty in places I should not be sweaty sitting at home on my comfy couch! With all 3 kids whining and asking ‘what’s for dinner’ I had to put ‘ye old thinking cap on and scramble for ideas. Quickly. Kids whining and hungry…. Me all panicky thinking about the hot weekend… Sweaty and getting grumpy wasn’t going to make for a good night. Not to mention, we were all about to be HANGRY. Soon. Very, very soon. We all piled in the car where the AC works. 1 problem solved.

Loaded Baked Potato Salad Made With Fresh and Easy Ingredients

Tada! Problem 2 solved! If you live in NV, CA or AZ you know about Fresh & Easy Market! Like if the freshness of Wild Oats & the convenience of 7-Eleven had a love child, they would name it Fresh & Easy! All kinds of  organics, ready made but never frozen to-go items, awesome sauce fruit & produce – I am back in the “Broke Down AC But What’s For Dinner” game! SCORE! For the win… Crowd goes wild…. (too much?) I loaded a great hand-picked, hand-cut and chef-prepared ready to eat entree in my cart. Not turning the oven on, ‘member? I spied some organic potatoes for my loaded baked potato salad and I was back in my AC cooled car in less than 5 minutes.

Loaded Baked Potato Salad Ingredients

Let’s Make A Loaded Baked Potato Salad

INGREDIENTS:

  • 2lbs Potatoes (boil, cube, I left skin on)
  • 1 1/4 Cup Sour Cream
  • 1/2 Cup Cheddar Cheese (shredded)
  • 5 Strips BACON!!! (cook, drain fat, chop)
  • 4-5 Green Onions (sliced)
  • Salt & Pepper (to taste)

DIRECTIONS:

You put the water on to boil for the taters, right? You know, like mashed potatoes, but not. Let them get nice and tender so you can easily pierce with a fork. Drain water, let them cool off for a few minutes now.  Cook up the BACON and then drain off the fat. (I really loooove me some BACON) Dice that up, cube the taters and mix the whole she-bang in a big bowl. Save some of the cheese to top with after your loaded baked potato salad chills in the fridge for a bit.  ENJOY!

    I knew there had to be a recipe somewhere for this . The first time I tried it was at Hagens grocery store in the Seattle area in Washington state . I was so hungry and I decided to take it home and perform magic on it !!.. I took it home and into the kitchen ! I found a large serving spoon and put about 1/2 a pound on a plate . I covered it with saran wrap and popped it into the microwave for about 2 minutes . WOW it was all warm and the cheese was melty and gooey !! I had created a warm loaded baked potato instantly . . your recipe is a carbon copy . I love it and it has escorted many a steak to my table . everyone wants the recipe .

    My daughter and I follow you on Pinterest . Now I really need the recipe For baked somores they only have 4 ingredients Finely crushed Graham crackers . brown sugar , melted butter , . Press this mixture into a small cupcake paper that you have place in a small cupcake pan . the other two ingredients are Mini Marshmallows chocolate chips and a pinch or two more of Graham Cracker crumbs . I do not know any measurements or how long to bake !! Please Help me get this Please !!

    Sure would like someone to send me the some mores recipe . Very simple >>>> crushed graham crackers , butter , sugar . Either for part of it into a crust in the bottom o of a 9 By 13 pan or press into mini muffin pan or bite size tart pan . mini marshmallows or marshmallow Fluff chocolate chips extra graham cracker crumbs .
    NOW WHAT ..>>>>>>> I NEED THE AMOUNTS TO USE OF EVERYTHING . THE TIME TO BAKE IT ANY ADVICE YOU COULD SUGEST THAT I FORGOT !!!! PLEASE , PLEASE HELP
