Skinny Jalapeno Popper Stuffed Chicken Recipe Weight Watchers Friendly
So, I know you’ve been following me on Facebook, right? I told you how I was looking into starting Weight Watchers Simple Start Plan. Well I did it you guys!! Yep! And on Valentine’s Day no less!! I know you also saw me talking about last week being my birthday. And honestly, that’s what kind of drove me to it. I ain’t a gettin’ any younger. But, I realized I’m kinda getting fluffy in places I don’t really want to be fluffy!! It’s a bummer. I’m not a big girl, I don’t really have any room to hide any extra and unwanted ‘fluff’… It was giving me the sadz. I just can’t shovel all the yummy goodies in my mouth and POOF they melt away anymore. Nope. They stick. FLUFFY!! I thought it would be tough. Totally not. I downloaded the cool app for my phone and ya know what??
There’s real food, real tips for peeps like me who are less than stellar ‘dieters’. All kinds of things that make the word DIET a dirty 4 letter word. Because! Jalapeno Popper Stuffed Chicken!! I know, right! Doesn’t sound diet-y at all! My friend emailed me this stuffed chicken recipe she makes while on Weight Watchers. No. It’s not my ooey, gooey Drunken Chocolate Cupcakes. But, I’m working on making those fit the plan. Watch for that! 1 week down and I’m feeling fine! Here’s how you can indulge and still stick to the plan too!
Skinny Jalapeno Popper Stuffed Chicken Recipe
Ingredients:
- 4 Skinless Chicken Breast (sliced 1/2, pounded thin)
- 2 Pieces of Bacon (cooked, drained, crumbled)
- 3 Fresh Jalapeños (chopped thin; can remove seeds I didn’t)
- 4OZ Fat Free Cream Cheese (softened)
- 4OZ Reduced Fat Cheddar Jack Cheese (shredded)
- 3 Green Onions (chopped)
- 1/2 Cup Italian Style Bbreadcrumbs
- 2 Limes (juiced)
- 1 TBSP Extra Virgin Olive Oil
- Salt & Pepper (to taste)
Directions:
1st, let’s preheat that oven to *450. Clean and pat dry your chicken breasts. Salt and pepper to taste. Set those aside for just a second. In a medium sized bowl, mix up your cream cheese, shredded cheddar, jalapenos, bacon and green onions. In a 2nd bowl, combine olive oil, a pinch of salt & pepper and your lime juice. 3rd bowl for breadcrumbs. Set up an assembly line of all 3. Since you’ve already sliced and pounded out the chicken, we’re ready to get stuffing those babies! Lay them out flat and spread about 2 tablespoons of cheese mix across. Roll them up! Not too tight or they won’t cook through. You can also stick a toothpick in the ends to keep the cheese from seeping out. I did! I didn’t want to lose a single ooey, gooey drop! Now drop each stuffed chicken roll in the bowl with lime juice mix, then the breadcrumbs bowl. One at a time and coat it well. Coat a non-stick baking pan with spray and place each stuffed chicken roll seam side down. Pop in the oven for 20-25 minutes until completely cooked and nicely browned! And that my soon to be eating healthy friends, is all!
I made some steam broccoli to serve with my jalapeno Popper Stuffed Chicken and BAM! Perfect dinner! Totally doesn’t feel like a dirty 4 letter word. At.All! Each serving has 370 calories, 9 WW Points, and get this… 42 grams of protein!! Sweet, right! I had left-overs and had me an awesome lunch too!
As a reward for being such a good girl all week, I made some Mango Lime Sorbet and a Raspberry Mint Sorbet for dessert BOTH are Weight Watchers approved!. Fruits and veggies have 0 WW points, so there’s literally a ton of things I’m thinking of whipping up! Ya know what? I don’t have the sadz anymore!! And… AND!!! Pretty soon, this extra fluff I’ve started piling on will be history!
