I don’t know about you, but I was counting on ‘Back To School’ season being full of free time. Sleeping until noon, watching my shows in my jammies all day. Not so much.  In fact, I’m going out on a limb and saying I’m actually busier now that Ethan’s in school! Crazy, I know. This is our 3rd back to school week and we’ve stuck in not 1 but 2 birthday parties for the big guy (he’s 7!!!) We rush around like chickens pecking at the air to make the bus in the mornings and then run home to do all that homework before dinner. I’m jam packed with work all day, so while staying comfy in the jammies is totally happening, there’s not much napping or catching up on my shows going on. At all. I don’t want to be stuck in the kitchen all night too. So, this week, I popped over to Walmart to check out some Nestle Meal Solutions.

Back To School Ideas – Lasagna and Chocolate Chip Cookie Ice Cream Sammies

We are really trying to skip eating out and as much as I love the pizza delivery guy, we put a halt to that as well. I love, love, love my slow cooker and you’ve seen my awesome sauce dinner recipes. But sometimes, a girl’s just too tried. Ya know? Nestle puts out some great options to help me stay out of the kitchen. We really like the Stouffer’s Family Entrees. Ethan’s favorite is the Lasagna, so that’s what we got this time around.

Add an easy salad and Ta-Da… Quick and easy dinner. With veggies too! I popped it in the oven and had an hour to help him with his homework. For a 2nd grader, he’s got some serious homework! I may or may not have had to Google what a parallelogram is. Maybe. Ok, I did. Do you know what they are still??

Chocolate Chip Cookie Ice Cream Sandwich Back to School Idea

A super easy way to whip up dessert without baking my cupcakes all day are these babies! I used the Nestle Chocolate Chip Cookie Baking Kit along with that Yummy Dreyer’s Ice Cream. We slapped them together to make some ooey, gooey Chocolate Chip Cookie Ice Cream Sandwich Mini’s! It’s super easy and Ethan got to help, which was a bonus for him. His goal? To be the next Top Chef, so he’s sharpening his skills in the kitchen.

He was quite proud of his efforts too! The box makes like 2 dozen, so there’s plenty left over cookies to pack in his lunch as well. He really doesn’t like the school food. I can’t blame him really. Blech. Since my hubby has some big boy hands, Ethan decided he needed a big boy sized Chocolate Chip Ice Cream Sandwich. No Mini’s or him!

Looks yummy, right? I think together we did an awesome job! I know I post a ton of great recipes on both blogs, but you honestly didn’t think I’m all Julia Child-like in the kitchen every night did ya? Oh heck no! I totally cheat! Especially now that we’re back to school! Don’t tell, M’kay? Nestle makes it look super easy, so let’s keep that just between us! How do I like my chocolate chip cookie ice cream sandwiches? Crunched up and dunked in milk, of course!

    Is it just me or is homework crazy for elementary schoolers these days?! It makes me nuts. I have a secret love of Stouffers Lasagna – especially the veggie! It’s such a great way to make dinner easy especially when we’re doing 2 hours of homework for a 1st grader!

      Way, way WAY too much homework!! 8 hrs in school + 2 hours homework = TOO much work and not enough play! 🙂

    These look amazing! I like the idea of them being minis because I am going to eat 2 of them regardless of what size they are, built in portion control.
