Nutty Chocolate Poke Cake

All the desserts everywhere are jealous of this dessert. Because Chocolate Poke Cake (AKA – Better Than Everything Cake) Also? It’s done and ready to eat in 15 minutes. I know! And, chocolate. Lots of it. My oldest is on leave visiting for the holiday. I figure he’s put all this time into being an amazing kid and proud card carrying mamma’s boy, he deserves dessert. Every.Single.Day.  But also, he’s out there doing the whole protecting out country thing with Uncle Sam… So, I should make that dessert yummy and quick. My boy gets chocolate poke cake!

Chocolate Poke Cake Recipe Ingredients

Poke Cake Recipe

INGREDIENTS:

  • Pre-made Sponge Cake
  • 1 Package Chocolate Pudding Mix
  • 2 Cups Cashewmilk
  • 1/2 Cup Cashews (rough chop)

DIRECTIONS:

Unwrap pre-made sponge cake and place on serving plate. Using the handle of a wooden spoon, poke holes on top of cake going deep about 2/3 of the way down. Get it poke? Poke Cake? Set aside. In medium bowl, mix pudding with cold Silk Cashew Milk until completely combined. Immediately pour over the top of cake. Allow pudding to sink into holes and cover the entire poke cake. I like to pour on just a tad ‘more’ than it looks like you’ll need so it drips over the sides. Totally your call. Can you really have too much? Top with chopped cashews and refrigerate for 15 minutes.

We’ve been drinking Silk Almond for quite sometime. Ethan loves it both in the glass and over his cereal. My neighbor makes her own Cashewmilk and can I just say, I’m too lazy. So I was happy to see this hit the shelves! It’s rich and creamy and has less calories than skim milk. My husband started putting it in his coffee. And me? I threw it in the blender and made some smoothies. Oh, now that made my morning! It’s awesome for folks who can’t have dairy products.
