A Skinny Watermelon Margarita & Girls Gone Wild In Las Vegas

Ok, maybe ‘Gone Wild‘ in Las Vegas is a slight exaggeration. But we did ‘Do Vegas‘. And party like a rock star is actually a skinny Watermelon Margarita. Or 3. Because that’s how you roll when your BFF of 35 years comes to town. Remember when I told you about my BFF Kathy and I going to girl scout camp back in the 70’s and I refused to pee in the port-a-potty? We grew up in Chicago and  lived a few blocks apart. We still like Girl Scout cookies but won’t pee in a port-a-potty. Well, we just spent the whole weekend kickin’ it up over here in Vegas! I know! There’s nothing better than having 1 really awesome sauce friend that has literally known you forever. We all have ‘friends’, but you know that 1 friend who knows every.single.little.thing about you and still hasn’t run away screaming? That’s Kathy. I luv, lurve, looooove her.

A Watermelon Margarita With Your BFF

We ditched my family for 1 day and got mani / pedi’s. Only kind of matching because we’re 40 not 14. Still cute tho, right? We didn’t play Barbie’s but we totes gossiped about all the girls we don’t like and all the boys we do. Tonight we’re going to The Strip, checking out the new Linq ride and eating dinner at my smexy boyfriend Guy Fieri’s restaurant. Be jealous. I’ll tell you all about it later. Last night, like 2 giggly girls we made a Watermelon Margarita (fine, a pitcher full, but who’s counting…) and watched The Batchelorette. Oh Chris! I was sad for him. Poor schmoo didn’t even see it coming! They never pick the right ones…. Anyways, because we’re 40 and not 24, we have to watch or girl-ish figures now too. So we actually made a Skinny Watermelon Margarita for our girl’s night in. Like I said, Girls Gone Wild ya’ll…. Want the recipe?

Skinny Watermelon Margarita Ingredients

Skinny Watermelon Margarita

INGREDIENTS:

  • 1 1/2 Cups Watermelon (pureed)
  • 1 Cup Tequila (use a good quality clear or it’ll Te-Kill-Ya, see what I did there?)
  • 1/2 Cup Triple Sec (orange liqueur)
  • 1/2 Cup Lime Juice
  • 2 TBS Sweet’N Low (makes it ‘skinny)
  • Pinch of salt

DIRECTIONS:

So, I’m a ‘don’t water my drink down’ kinda gal. This is a ‘blended’ drink which typically calls for ice, right? So, a few hours before making them, I cubed some watermelon and froze them. I was able to use them as a really cute garnish, but also in place of 1/2 the amount of ice so they didn’t get so watered down! Smart ain’t I? (ain’t???) So, do that! Then take your pureed watermelon, tequila, triple sec and lime juice and toss it in your blender. Pulse that a few times to mix it up. Toss in your frozen watermelon cubes and ice (3 cups total combined) Sweet’N Low and a pinch of salt. Blend baby, blend! Pour in a tall glass, garnish with some of the frozen cubed melon, maybe a lime and those puuuurty drink umbrellas and ENJOY!

Because I know Kathy isn’t a spice girl fan, I left out the Jalapeno Pepper slices which I normally add. Maybe it’s because I live in Vegas and we’re just always pushing the envelope, but I like some heat. As long as you’re over 21 and drink responsibly, I’ll let you make that call!

    I had a watermelon mojito while visiting the states but I wasn’t too impressed with it. It wasn’t blended so it just felt like I was drinking something with big chuck of watermelon getting stuck in the straw! But would love to try this watermelon margarita!!
