A Few Quick One Liners…. And Chocolate Covered Espresso Beans

1. I made Chocolate Covered Espresso Beans! Well, I made more like ‘bark style’ chocolate espresso beans, but kinda the same. It was way easy. Remember I said I was doing cool stuff for American Chocolate Week? Well, I did. I was just way too busy with this whole Easter Bunny shenanigans and needed a nap. So, you can find the recipe below. I also made Drunk Coffee and Chocolate Cupcakes. {coffee and chocolate Bailey’s cupcakes with whipped cream flavored vodka frosting} I posting that on the other blog, go check those babies out! And, some homemade Vanilla Bean Ice Cream. That I’ll post here after I watch the season finale of Walking Dead I missed last night. You should check those out too! And don’t tell me what happened on my show!

2. Took Ethan to Chuck E Cheese. I love that he plays Skee-Ball like A Champ! But, some of those *other* kids and quite a few of their parents… let’s just say there’s not enough chocolate covered espresso beans in the entire world to make me love Chuck E Cheese. That place is not for amateurs. It’s brutal ya’ll! Oh! Remind me sometime to tell you about working at ShowBiz Pizza when I was 16. Imagine Chuck E Cheese but with a bear instead of a mouse. I had to dress in the bear costume. #Worst1stJobEver !!

3. As a MLB fan {GO CUBS!} and HUGE coffee drinker, I kind of find this disgusting. Do we really need Hot Dog flavored coffee? I’m thinking no. And… eeeww…  If you’re a PR rep for International Delight and read this, feel free to send some my way if you think it’ll change my mind. If it does, I’ll totally admit I’m wrong. But I don’t think I can buy it. And please send some back up favorites {Almond Joy and Heath Bar} you know, just in case.

4. Because THIS is one of the coolest things I’ve seen all week….

Ready for the Chocolate Espresso Beans Recipe? Let’s go!

Ingredients:

  • 4 oz. Milk, White or Dark Chocolate (we used a bag of Hershey’s Dark Chocolate Chips!)
  • 2 Cups Roasted Espresso Beans (we bought a bag of Starbucks)

Directions:

Line a cookie sheet with parchment or wax paper. Heat chocolate in a double boiler until melted. Stirring a LOT!!! Avoid getting any water in your chocolate. Even a tiny little drop will mess up your whole batch of chocolate! Add espresso beans to the melted chocolate, a handful or so at a time. Stir until beans are well-coated. Scoop up the beans with a fork to drop them onto the parchment or wax paper one at a time so that they’re not touching. Let the chocolate harden completely and then seal them up in a tightly covered container. Or, you can just go ahead and melt chips in a glass bowl in the microwave, pour in beans, stir and spread it out into a ‘sheet’. Let harden and break into chunks. We did that!

      Actually, it depends on the quality and size of the beans… I’m good after a handful.

    Wowwweee! I could use some of this right now. Mostly for the caffeine. But also chocolate. Don’t judge me for wanting chocolate at 9am. LOL
    And yea…some coffee creamer flavors are not meant to be. Hot dog is one of them. Then again, I don’t think pumpkin and coffee go together either, but that’s just me…;)

    I feel for you having to take Ethan to Chuck E. Cheese. That was a place I tried to avoid at all costs! Thankfully, you had the chocolate expresso beans to make up for it. 🙂

    Chuck E Cheese…been there twice and I try to avoid it!! We have a smaller chain here like Chuck E Cheese, and thankfully it is never crowded!

    I heart this whole post. Where in the heavens did you find that cruddy hot dog flavored coffee cream? That is a travesty and I know the blood of Jesus is against it. I can’t imagine the kick that comes from chocolate covered coffee beans, though. #highgearallday

    I am not a coffee or espresso fan but I have a ton of family members and friends that would LOVE this recipe. I am with you on the hot dog creamer. I mean, really? Odd!

    I am definitely not a coffee drinker, but hey, it looks good just the same. My daughter loves Chuck E. Cheese, but her parents do NOT lol! I also believe I may have had a birthday party or something like it at a Showbiz Pizza once upon a time… LOL!

    I’m fairly sure hot dogs do not belong in coffee. Just saying. 🙂 Chocolate covered expresso beans with coffee is something I can get behind.

    My son has asked me numerous times to take him to Chuck E. Cheese, but based on horror stories I’ve heard from other parents, I have never taken him. Maybe one day!
